Chocolate-Avocado Pudding

Serving size: ½ cup 
 

What you need:

6 medium avocados, very ripe, skinned and pitted
1 cup unsweetened cocoa powder
1 cup honey
1 pinch sea salt, fine ground
1 cup 1% fat or fat free milk
3 cups fresh seasonal berries (i.e. strawberries, blackberries, raspberries) 

What you do:

  1. Place all ingredients in a blender or food processor, and blend/process until a smooth and creamy texture is achieved.
  2. Divide pudding evenly among 12 cups, top with fresh berries, cover cups with plastic wrap, and keep chilled in the refrigerator until ready for eating.  May also keep finished pudding in one covered bowl chilled in the refrigerator, until ready to top with raspberries, and eat.
  3. Enjoy!
